Friday Five: Fall Treats

Oh my, our mouths are already wateringšŸ¤¤

We’ve rounded up five of our favorite fall treats, which was difficult to narrow down, there’s just so many fall goodies!

Scotcharoos

Ingredients

  • 1 cup peanut butter
  • 1 cup sugar
  • 1 cup light corn syrup
  • 6 cups Rice Krispies
  • 3/4 cup butterscotch chips
  • 3/4 cup chocolate chips

Instructions

  • Mix peanut butter, sugar and corn syrup, to a boil
  • Pour over Rice Krispies in a 8×8 or 9×9 pan
  • Melt chocolate chips and butterscotch chips together and mix well
  • Spread over top of cereal mix
  • Cool, cut, serve, enjoy!

Apple Crisp with vanilla bean ice cream

Ingredients

  • 6 large apples
  • 1/2 cup granulated sugar
  • 1 tablespoon flour
  • 1 teaspoon ground cinnamon
  • 1 cup quick cooking oatmeal
  • 1 cup flour
  • 1 cup packed brown sugar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 cup butter, melted

Instructions

  • Preheat oven to 350 degrees
  • Peal, core, slice apples and place in baking dish
  • Mix together 1/2 cup granulated sugar, 1 tablespoon flour and 1 teaspoon cinnamon in a bowl. Sprinkle over sliced apples and toss to combine
  • Combine the remaining ingredients (oatmeal, flour, brown sugar, baking soda, baking powder, butter) in a bowl and mix until crumbly.
  • Top the sliced apples evenly with crumbly mixture
  • Bake for 45 minutes and serve with vanilla bean ice cream

Salted Caramel Buttery Crumb Bars

Ingredients

  • 1 cup unsalted butter (2 sticks) softened
  • 3/4 cup confectioners sugar
  • 1/2 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup salted caramel sauce

Instructions

  • Preheat oven to 325 degrees and line 8×8 pan with aluminum foil and spray with cooking spray
  • Combine butter and sugar on high until creamed and fluffy (about 3 minutes)
  • Add vanilla bean and combine on high speed (about 1 minute)
  • Add flour and beat on low speed (about 1 minute); if sticky add 1 or 2 tablespoons flour as needed
  • Put 1/3 of dough mixture into pan and press; bake for 20 minutes (refrigerate rest of 2/3 dough)
  • Take pan out of oven and put heaping 1/2 cup of salted caramel sauce over crust
  • Evenly crumble rest of dough over top; bake for 25-32 minutes until top is barely golden brown
  • Remove from pan and drizzle with additional caramel sauce; let cool 2 hours

Candy Corn Peanut Mallow Bars

Ingredients

  • 2 cups peanuts (honey roasted, dry roasted, your choice!)
  • 1.5 cup candy corn divided
  • 1 bag peanut butter chips
  • 4 tablespoon butter
  • 14 oz sweet condensed milk
  • 10 oz bag marshmallow

Instructions

  • Mix 1.5 cup peanuts and 1/2 cup candy corn and spread on bottom of 9×13 pan
  • In saucepan, melt peanut butter chips and butter over medium heat; stir frequently until melted and add sweet condensed milk
  • In a large bowl, add marshmallows and melted peanut butter mixture until marshmallows are coated
  • Spread marshmallows over peanuts and candy corn and sprinkle remainder or peanuts and candy corn on top pressing into marshmallows
  • Refrigerate and serve!

White Chocolate Pumpkin Spice cookies

Ingredients

  • 1.5 cup sugar
  • 1/2 cup butter flavored shortening
  • 1/2 cup butter
  • 2 eggs room temperature
  • 1 tablespoon vanilla
  • 1.5 teaspoon cream of tartar
  • 2.75 cup flour
  • 1 teaspoon baking soda
  • 1/8 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 teaspoon pumpkin pie spice
  • 2/3 white chocolate chip
  • 3 teaspoon cinnamon
  • 4 tablespoon sugar
  • 1 teaspoon pumpkin pie spice

Instructions

  • Preheat oven to 375 degrees
  • Cream butter, shortening and sugar together
  • Add eggs vanilla and cream together with butter, shortening and sugar
  • In another bowl, combine cream of tartar, flour, baking soda, pumpkin pie spice and salt
  • Gradually add dry mixture to wet ingredients and stir until well combined; add white chocolate chips and mix
  • Refrigerate 30-45 minutes
  • Combine sugar, cinnamon and pumpkin pie spice
  • Form refrigerated dough into small balls, roll into in cinnamon/sugar mixture and place on greased cookie sheet
  • Bake for 8 minutes, let cool and enjoy!
